השנה שעברה על כולנו הרגישה יותר כמו נצח. מי זוכר את העולם שלפני… לפני המסכות והמטושים, הסגרים ההדוקים והרופפים. עולם שבו מסיבות יום הולדת עליזות בלי מסכות היו דבר שבשגרה. יום הולדת 3 לבלוג הצטלב השנה עם יום הולדת 3 חודשים לנסיך החדש, ולאחות אהובה. זה אומר שצריך להכין עוגת יום הולדת חגיגית בהחלט!
ומה יותר "יום הולדת" מסוכריות צבעוניות? בהשראת עוגת הספרינקלז של כריסטינה טוסי – קבלו אותה גבוהה ומיוחדת: 3 שכבות של עוגת וניל עם סוכריות צבעוניות, מוס גבינה, והמון פירורים פריכים שגם בהם יש – איך לא – סוכריות צבעוניות. ולמרות שהיא נראית כזאת מושקעת- מכינים אותה בקלי קלות. אז תנפחו בלונים, חוגגים !
ועכשיו לקצת סיכומים!
78 פוסטים עלו בבלוג במשך 3 השנים האחרונות, כולם מתוקים ונפלאים בעיני.. אבל בכל זאת, כשעברתי עליהם שוב אחד אחד, מצאתי כמה אוצרות נשכחים, מתכוני זהב פשוט מושלמים. חלקם ישנים יחסית, מתחבאים להם בין הררי המלל והתמונות.. וחלקם קצת יותר חדשים ופופולריים. יש כמה קלילים , וכמה שדורשים מעט יותר השקעה. אבל כל אחד מהם הוא פשוט מופלא. אז כל עוד הסגר עוד לא נסגר , והרוכסן בחצאית עדיין נסגר… ממליצה לכן להפשיל שרוולים ולנסות (אם לא ניסיתן עד עכשיו..)
טארט שוקולד עם גנאש קרמל – תופתעו לשמוע שהמתכון הותיק הזה, שאולי הכי פחות מוכר פה בבלוג, נמצא אצלי במקום הראשון! ומה הפלא? שילוב הזהב של שוקולד- קרמל – אגוזי לוז תמיד מנצח. השוס במתכון – גנאש שוקולד קרמל – משמש אותי הרבה במילוי מקרונים, פחזניות ועוד.
טים טאם – העוגיה הממולאת שהיא בעצם חטיף ממכר- אם לא ניסיתן עד עכשיו , ויש לכן סבלנות – לכו על זה. מתאים מאד גם לפורים המתקרב, ואל תשכחו לשלוח לי טעימות !
עוגיות בצל – טוב מתכון אחד של סבתי חייב להיות ברשימה. אולי הכי פחות צפוי. אבל העוגיות המלוחות הללו מפתיעות בכל פעם מחדש, כמה מהר אפשר להכין אותן! כמעט באותה מהירות בה הן מתחסלות.
מאפינס חמאת בוטנים – ואי אפשר בלי מתכון עם חומר הגלם האהוב עלי ביותר- חמאת בוטנים. המאפינס האלה כל כך טעימים וקלים להכנה, שפשוט אי אפשר שלא לאהוב אותם.
חטיפים ממכרים – אני יודעת שאפשר לקנות אותם במכולת השכונתית. אבל יש בהם קסם מיוחד כשמכינים אותם בבית. אז איזה טיפוס אתם? טעמי או אגוזי? או אולי גם וגם?
ואיזה מתכון אתם הכי אהבתם בבלוג? ספרו לי בתגובות.. ובנתיים חגיגות!
עוגת יום הולדת חגיגית
לעוגת סוכריות צבעוניות:
- 4 ביצים
- 1 כוס סוכר לבן (200 גר׳)
- 3/4 כוס שמן קנולה (150 גר׳)
- ½ כוס חלב (120 מ"ל)
- ½ כוס שמנת מתוקה (120 מ"ל)
- מיץ מחצי לימון
- 1 כפית תמצית וניל
- 2 כפיות אבקת אפיה (10 גר')
- 2 כוסות קמח (280 גר׳)
- 1/2 כוס שקדים מולבנים טחונים (50 גר׳)
- ½ כוס סוכריות צבעוניות
להרטבת העוגה:
- ½ כוס חלב
לקראמבל סוכריות צבעוניות:
- ½ כוס סוכר (100 גר')
- ¾ כוס קמח (90 גר')
- 2 כפות סוכר דמררה / חום (30 גר')
- ¼ כוס סוכריות צבעוניות
- קורט מלח
- כפית אבקת אפיה
- 60 גר' חמאה קרה
למוס גבינה:
- 2 מיכלי שמנת מתוקה (500 מ"ל)
- 2 חב' גבינת שמנת (500 גר')
- 2 שקיות סוכר וניל
- ⅔ 1 כוסות אבקת סוכר (200 גר')
אופן ההכנה:
- מכינים את העוגה: במיקסר עם בלון הקצפה מקציפים ביצים שלמות עם כוס סוכר כ 5-10 דקות, לקבלת קציפה תפוחה ובהירה. מוסיפים נוזלים: שמן, שמנת, חלב , מיץ לימון ותמצית וניל ומערבבים במהירות נמוכה לאיחוד. מוסיפים את החומרים היבשים: קמח, אבקת אפיה ושקדים טחונים מערבלים באיטיות לאיחוד מלא. מוסיפים את הסוכריות הצבעוניות ומערבבים מעט ככל הניתן רק לפיזורן בתערובת באופן אחיד.
- יוצקים את העיסה על גבי תבנית תנור מרופדת בניר אפיה / משטח סיליקון , אופים בתנור מחומם ל 180 מעלות כ 20-25 דקות, עד שהעוגה מתייצבת ומזהיבה מעט.
- מכינים את הקראמבל: מניחים את כל חומרי הקראמבל בקערת מיקסר עם וו גיטרה ומערבלים לקבלת פירורים דקים. מפזרים בשכבה דקה על תבנית תנור מרופדת בנייר אפיה, ואופים 8-10 דקות בתנור מחומם ל 180 מעלות עד שהפירורים מזהיבים קלות (זהירות! הם נשרפים ממש מהר) מצננים.
- מכינים מוס גבינה: בקערת מיקסר עם בלון הקצפה מקציפים 2 מיכלי שמנת מתוקה לקצפת יציבה. בקערה נוספת טורפים גבינת שמנת, אבקת סוכר וסוכר וניל לאיחוד. מוסיפים את תערובת הגבינה לקצפת וממשיכים להקציף כדקה. מעבירים לשק זילוף עם פיה חלקה.
- מרכיבים את העוגה: בעזרת רינג בגודל הרצוי קורצים 2 עיגולים מעוגת הבסיס, קורצים שני חצאי עיגולים נוספים ליצירת השכבה האמצעית. מניחים את הרינג במרכז צלחת הגשה, ומרפדים בשקף . מניחים שכבת עוגה אחת, בעזרת מברשת – מברישים אותה במעט חלב. מזלפים מוס גבינה בנדיבות ומפזרים כ ⅓ מכמות הקראמבל. מניחים שכבת עוגה נוספת (זו העשויה מ 2 חצאים) ומהדקים. מרטיבים שוב במעט חלב, מזלפים שכבת מוס גבינה ומפזרים עוד קראמבל. מניחים את שכבת העוגה האחרונה, מזלפים את קרם הגבינה הנותר ומסיימים בפירורים.
- מקפיאים 3-4 שעות להתייצבות. לפני ההגשה – מסירים את הרינג והשקף ומעבירים להפשרה במקרר.
כדאי לדעת:
- מומלץ להשתמש בסוכריות הצבעוניות של הביוקר, גם בגלל הצבעים היפים וגם מכיוון שצבע המאכל שלהן פחות נמרח..
- לגרסה פרווה: בעוגה- מחליפים שמנת מתוקה בצמחית, חלב במים. בקראמבל – מחליפים חמאה במרגרינה, את הקרם בין השכבות מחליפים ב2 מיכלי קצפת צמחית שמקציפים עם 2 כפות פודינג וניל.
- את העוגה בתמונה הכנתי ברינג בקוטר 18 ס"מ ואת השאריות הרבות ניצלתי להכנת קינוחי כוסות בשכבות. אפשר גם להכין מהם טרייפל מרכזי – חותכים את שאריות העוגה לקוביות אחידות ומניחים בכלי זכוכית, מזלפים מהקרם הנותר ומעליו – פירורים. ושוב – קוביות עוגה, קרם ופירורים.
- אין לכם רינג גבוה מספיק? מניחים שקף נוסף צמוד לדפנות הרינג לפני הרכבת שכבת העוגה האחרונה, כך שהשקף ממשיך את הרינג לגובה.
