pots de crerme, או קרם פוץ בשבילכן, נעים מאד. למדתי להכיר את הקינוח הזה לעומק (תרתי משמע) לאחרונה. כל כך לעומק, שאני יכולה להקריא לכן את המתכון מתוך שינה. גם אתן תזכרו אותו בקלות אם תנסו אותו פעמים רבות כל כך בשבוע וחצי, כמוני. וגם.. כי הוא מורכב סה"כ מ 5 רכיבים (קורט מלח לא נחשב!) והוא כל כך קל להכנה שבכל פעם שהיתה לי שאלה לגביו, פשוט הכנתי אותו שוב. מה שאומר שהמקרר והמקפיא שלי עמוסים לעייפה בצנצנות קרם מסוגים שונים ומשונים, והאורחים האחרונים נאלצו לטעום אותו שוב ושוב ולמלא דף משוב בנושא. תלונות טרם התקבלו, צנצנות ריקות ונקיות כן.
אז אם לא הכרתם עד עכשיו, קינוח pots de creme הוא פשוט קרם קטיפתי (ללא גלוטן) אפוי בצנצנת. הוא מורכב מחלמונים, חלב (צמחי), שמנת (צמחית), ושוקולד כמובן. מושלם לגיוון כקינוח לסעודת שבת חורפית כשהוא מוגש חמים, עם תלולית קצפת ושברי שוקולד מריר. פגשתי בו די מזמן בבלוג הזה וחיכיתי לשעת כושר קרירה כדי לנסות אותו במגוון צורות הכנה ועיגולי פינות, את המסקנות המפורטות תוכלו לקרא בתחתית המתכון, ב"כדאי לדעת".
הערה: המילה "פוץ" נבחרה בעקבות קשיי תרגום ואינה מרמזת בשום אופן על אופיו של הקינוח, שהוא מעודן ביותר. תוכלו לקרא לו בכל שם שתרצו, הצעות יתקבלו בברכה בתגובות. בנתיים נתפשר על "קינוח קרם שוקולד קטיפתי". העיקר שתכינו 🙂
קרם שוקולד אפוי בצנצנת
- 6 חלמונים / 2 ביצים + 2 חלמונים / 3 ביצים
- 2 כפות סוכר (20 גר')
- 200 גר' שוקולד מריר איכותי שבור / קצוץ
- 1/2 כוס חלב / חלב שקדים (125 מ"ל)
- 3/4 1 כוסות שמנת מתוקה / צמחית (430 מ"ל)
- קורט מלח
אופן ההכנה:
- בקערה בינונית טורפים ביצים וסוכר.
- לקלחת קטנה מוזגים שמנת, חלב וקורט מלח. מביאים לסף רתיחה על להבה בינונית. מסירים מהאש ומוסיפים שוקולד מריר. ממתינים דקה וטורפים היטב לקבלת קרם נוזלי וחלק. ממתינים כ5 דקות כדי שהקרם יצטנן מעט.
- מניחים את הקערה עם הביצים על מגבת (כדי שלא תרקוד תוך כדי ערבוב) ביד שמאל- יוצקים את קרם השוקולד באיטיות רבה על הביצים, ביד ימין – טורפים היטב את הביצים תוך כדי המזיגה, עד שמתקבל קרם אחיד. ניתן לסנן אותו בעת הצורך כדי להפטר מחלבונים שנקרשו או גושי שוקולד שלא נמסו.
- מעבירים את הקרם לכלי נוח למזיגה. מניחים כלים אישיים המיועדים לאפיה (זכוכית, קרמיקה או אפילו קרטון) על תבנית אפיה (אפשר גם חד פעמית) וממלאים אותן בקרם השוקולד עד למחצית מגובהן. ניתן למלא בזהירות את התבנית הגדולה במים רותחים, עד לכשליש מגובה הכלים (ראו בהערות מטה למה). אפשר גם לוותר ולאפות כך.
- אופים בתנור מחומם ל 160 מעלות כ 20-30 דקות, עד שהקרם מתייצב בדפנות אך עדיין רוטט במרכז. זמן האפיה משתנה בהתאם לגודל וכמות הקרם בכלים. חשוב מאד לא לאפות יתר על המידה כדי שהקרם לא יתגבש מדי, אז אל תשכחו לבדוק כבר אחרי 15 דקות אם הקרם מוכן.
- שומרים בטמפרטורת חדר או במקרר, רצוי לחמם מעט לפני ההגשה.
כדאי לדעת:
- המתכון המקורי דורש להשתמש בחלמונים בלבד. אם אתם מאלה שלא אוהבים שאריות חלבונים במקרר (למרות שניתן להכין מהם מקרונים, נשיקות, או אפילו להקפיא ) אפשר להכין גם מביצים שלמות. במקרה כזה עדיף להעביר את הקרם במסננת לפני העברתו לתבניות כדי להיפטר מחלבונים שנקרשו. בכל מקרה המרקם הסופי של הקרם יהיה מעט פחות קטיפתי, ויש גם סיכון לקרם גבשושי יותר, אז היזהרו לא לאפות יותר מדי.
- במקום חלב צמחי (סויה או שקדים) אפשר להשתמש ב 1/4 כוס נוספת של שמנת צמחית, ו 1/4 כוס מים.
- במתכון המקורי יש לאפות את הקרם בצנצנות קרמיקה אישיות המונחות בתוך"אמבט" מים רותחים. ניסיתי בצורה הזו, ניסיתי בכוסות זכוכית עבות, עם ובלי מים רותחים, ואפילו בתבניות קרטון אישיות למאפינס. הכל טעים. מאד. ההבדל היחיד שאותר – שולי המאפה פחות חלקות באפיה ללא אמבט. לשיקולכם..
- אפיה עם כיסוי נייר כסף תניב קרם אחיד, ללא קרום עליון. נסו עם ובלי ותוכלו להחליט מה מתאים לכם יותר.
- הקינוח טעים בכל מצב, אך לטעמי הוא במיטבו כשהוא חמים (ניתן לחמם על הפלטה לאחר הגשת המנה המרכזית) ובתוספת קצפת – אותה אני מקציפה לפני שבת (עם כף אבקת סוכר, לא חובה), ושומרת בקופסא במקרר. לפני ההגשה מניחה כפית קצפת ומפזרת שוקולד מגורד.
- אפשר לגוון בטעמים – מוסיפים כפית קפה נמס לחלב + שמנת לפני ההרתחה, או מחליפים 2 כפות חלב ב 2 כפות ליקר שוקולד.
אפשר לשמור במקרר או במקפיא. מחממים בחום נמוך בתנור, או על הפלטה (לא במיקרוגל)
