כמה התרגשתי כשמצאתי אותו. ממש מתחת לפנס! בצק מעולה, נוח לעבודה, פריך לתפארת, ללא גלוטן כמובן, ללא קטניות, לא שרויה, ללא.. נשאר משהו בכלל?
אין על טארטים. כבר אמרתי את זה פעם. ומה עושים כשהשחקן העיקרי, הבצק הפריך, משחק אותה "קשה להשגה" בחג המצות? לא מוותרים. עברו עלי כמה פסחים טובים של נסיונות מתכונים שונים ומשונים שהבטיחו בצק טעים וגם פריך, אבל לא ענו על הציפיות. עד שבשנה שעברה, החלטתי לנסות להכשיר את המתכון הרגיל שלי לבצק פריך לפסח על ידי החלפת הקמח בשילוב של קמח תפוחי אדמה ושקדים טחונים (מולבנים בבקשה!). התוצאה היתה מושלמת. השנה ניסיתי לשחזר אותה שוב, במליות אחרות, ושוב – הצלחה מסחררת. אז קבלו אותו, הבצק הפריך הפסחי שלי !
במתכון (ותמונות) משנה שעברה – עם קרם פקאן וגנאש שוקולד דולסה. מסכן דיאטות. ראו הוזהרתם!
או בהתאמות והחידושים מהשנה: במלית לימון – תפוז המבוססת על מתכון העוגה המוצלחת הזו משנה שעברה. הפעם הכנתי את הקרם ללא שמן קוקוס, ועם מיץ תפוזים כתחליף לאננס. אפשר גם להחליף 2 חלמונים בביצה אחת במלית, כדי לא להשאר עם חלבונים עודפים. במקרה כזה חובה לסנן את המלית לאחר הבישול כדי להיפטר מפירורי חלבונים קרושים.
והנה עוד אופציה מעולה! ריבועי פקאן: אותו בצק, משוטח על תבנית, ועליו מלית הפקאן המעולה הזו. ואפילו בגרסה פרווה- עם שמן קוקוס (50 גר') במקום חמאה, ושמנת צמחית פרווה שהשנה ניתן להשיג בכשרות המהודרת ביותר במקום שמנת מתוקה. הכינו את עצמכם לשאלות.. כן, לא להאמין אבל זה פרווה, וללא גלוטן!

טארט קרם פקאן וגנאש שוקולד דולסה לפסח
לבצק פריך ללא גלוטן:
- כוס קמח תפוא (170 גר')
- 3/4 1 כוסות שקדים טחונים (180 גר')
- 1/2 כוס + כף אבקת סוכר (70 גר')
- 160 גר' חמאה או 130 גר' שמן קוקוס
- ביצה
למלית קרם פקאן ושוקולד:
- 100 גר' אגוזי פקאן טבעיים
- 50 גר' שוקולד מריר
- 100 גר' חמאה קרה או 80 גר' שמן קוקוס
- 1/2 כוס סוכר דמררה (100 גר)
- קורט מלח
- 2 כפות שטוחות קמח תפוא (20 גר)
- ביצה
- 3 כפות חלב (30 מל)
לגנאש שוקולד לבן דולסה :
- 200 גר שוקולד בלבן
- 1/2 כוס שמנת מתוקה
אופן ההכנה:
- מתחילים בהכנת בצק: במעבד מזון או במיקסר עם וו גיטרה מעבדים קמח תפו"א, חמאה/שמן קוקוס ושקדים לפירורים. מוסיפים ביצה , וממשיכים לעבד רק עד להתגבשות בצק. הבצק רך מעט יותר מהפריך החמצי ולכן מומלץ להשתמש בו דווקא לא לאחר קירור, אז הוא מתפורר יותר ברידוד.
- מרפדים בבצק תחתית של תבנית פאי או רינג נמוך, יוצרים נחשי בצק נוספים ומהדקים אותם לדפנות התבנית. אופציה נוספת: מרדדים את הבצק בין שני נירות אפיה (אפשר באמצעות כוס עם דופן ישרה אם לא הצטיידתם במערוך לפסח עדיין) . מסירים ניר אפיה אחד, והופכים את הבצק על תבנית האפיה. מהדקים לדפנות ומקפיאים מספר דקות. מסירים את ניר האפיה וממשיכים להקפיא כשעה.
- אופים את הבצק: לפני האפייה מניחים ניר אפייה על הבצק עליו מפזרים אגוזים עם קליפה (אלו המשקולות הפסחיים שלי, חלופה לקטניות). אופים בתנור מחומם ל 200 מע' כ 20 דקות , מסירים את ניר האפיה עם האגוזים ואופים עוד 5 דקות להזהבה.
- מכינים קרם פקאן: במעבד מזון טוחנים שוקולד ואגוזים, מוסיפים את שאר החומרים ומעבדים לקרם. יוצקים מעל הקלתית האפויה ואופים כ 25 דקות. מצננים.
- מכינים את הציפוי: מניחים שוקולד לבן במחבת טפלון . מחממים בחום בינוני גבוה תוך כדי ערבוב מתמיד במרית סיליקון. תוך כמה דקות השוקולד הלבן נמס ומתחיל להזהיב. מחממים ומערבבים כל העת אך נזהרים שלא לשרוף. מורידים את המחבת מהכיריים מדי פעם ומערבבים היטב.. אפשר להוסיף כפית שמן כדי לעזור קצת לתהליך. השוקולד מוכן כשהוא מקבל צבע ענברי עמוק. הוא יכול להיות מעט גרגירי, זה לא משפיע על הטעם המטריף.
- מוסיפים חצי כוס שמנת מתוקה ומערבבים. יוצקים מעל הטארט האפוי ומחליקים. אפשר להוסיף קישוט של דסקיות שוקולד או להשאיר ככה.
- שומרים במקרר כמה ימים או במקפיא לטווח ארוך יותר.
כדאי לדעת:
- אם נשארתם עם עודפי בצק פריך, תוכלו להשתמש בו עבור טארטים נוספים או אפילו עוגיות מעולות.
- ניתן להחליף את אגוזי הפקאן באגוזי לוז, או מלך.
- ניתן לוותר על הציפוי או פשוט להשתמש בשוקולד לבין רגיל להכנת גנאש שוקולד.

לא חובה במעבד מזון פשוט יותר נח לקצוץ כך דק את האגוזים והשוקולד אבל אפשר לקצוץ גם ביד ולהכין את המלית במיקסר.
