ביום קריר בחנוכה האחרון, אחרי תכנונים שינויים וביטולים (לא) צפויים, זה קרה: ארזתי את עצמי, סו שפית נמרצת, ותינוק מתוק ויצאנו לדרך – לבית המזמין של רות ברכה. רות, חברה בעלת קונדיטורית בוטיק ולב ענק, היא אלופת המאפים והפינוקים. את המארזים שלה אי אפשר שלא לחסל בדקות. מלוח או מתוק – תסמכו עלי, פירור לא ישאר.
המחשבה על יום כיף משותף ניקרה במוחי עוד מימי הצילומים הראשונים שלנו, לפני יותר משנה, אז בילינו בנעימים בביתי. ועכשיו – בתקופת חל"ד/חל"ת/ומה לא , החלטנו לפנק את עצמנו בעוד יום כזה נינוח ומשוחרר, הפעם אצל רות.
מה אומר ומה אדבר- היה שווה לחכות. את כמות הפינוקים שחיכתה לנו קשה לספור, החל מהאלפחורס המושלמים של רות (כולל מארז TO GO ) ועד נשיקות עם הקדשה לנסיך הקטן.
יחד עם האופות הקטנות שלנו הכנו "לחם פצפצים", שהוא בעצם לחם שום עסיסי בצורה שכיף להכין עם הקטנים ולזלול גם עם הגדולים. המתכון מתוך הספר "קל, קל, קל" של לייזה פאנלים (מומלץ! וסתם כך אם תרצו לצחוק יחד עם המתכונים שלכן זה המקום )
תוך כדי פטפוטים וצילומים, רות פתחה לנו שולחן כמו שרק היא יודעת – עשיר בפירות, ירקות, גבינות ועוד ועוד. חבורת הילדים העליזה קיבלה אישור רשמי לפתיחת הסעודה לא לפני שהשולחן הונצח מכל כיוון אפשרי, והחגיגה החלה. היה שם ממרח אחד, תמים ואדמדם, עם פיצוץ טעמים אמיתי – מתיקות פינת חמיצות ונגיעה של קינמון -ביס אחד מריבת עגבניות השרי הזו, ונשביתי בקסמה מיד. פשוט חייבים לנסות.
אז הנה המתכונים המנצחים, קלים ומעולים!
ושוב תודה רות על יום קסום! מחכה כבר לפעם הבאה אצלי 🙂
לחם פצפצים
2 תבניות בגודל 30X25
לבצק:
- 1 קילו קמח לבן / קמח כוסמין
- 2 כפות שמרים יבשים
- 4 כפות סוכר
- 2 ביצים
- ½ כוס שמן קנולה / זית
- 2 כוסות מים פושרים
- כף מלח
לציפוי שום:
- 10 שיני שום קלופות
- צרור עלי בזיליקום ופטרוזיליה
- פלפל שחור
- 1 כוס שמן זית
אופן ההכנה:
מניחים בקערת מיקסר עם וו לישה קמח, שמרים וסוכר ומערבבים מעט. מוסיפים ביצים ושמן, מתחילים לערבל ומוסיפים בהדרגה את המים. לבסוף מוסיפים מלח וממשיכים בלישה , עוד כ 8-10 דקות, לקבלת בצק נעים . משמנים מעט את פני הבצק, מכסים בשקית ניילון ומתפיחים כשעה – שעתיים להכפלת הנפח.
מזלפים שמן זית בנדיבות על תחתית התבנית ומתחילים לכדרר הכדורים אחידים בגודל של מסטיק גדול, ולא יותר מכדור פינג פונג .מניחים אותם בסמיכות על התבנית המשומנת, ומתפיחים שוב עוד כ 40 דקות.
מצפים ואופים- טוחנים את כל חומרי הציפוי בבלנדר. מורחים מחצית מהציפוי על הכדורים התפוחים ואופים בתנור מחומם ל 180 מעלות כ 25 דקות, עד שהכדורים תפוחים וזהובים.
מוציאים את התבניות ומורחים את מחצית הציפוי הנותרת על המאפה החם. מגישים ונהנים
כדאי לדעת:
- המאפה מצוין בהקפאה
אל תתקמצנו על שמן הזית בתחתית התבנית.. הוא זה שאחראי על הקצוות הקראנצ'יים הממכרים
הבצק המושלם מתאים למגוון מאפי שמרים – פיצות, סמבוסק, בייגלס או סתם לחמניות טעימות
אפשר לגוון את הציפוי עם ממרח פסטו ביתי בתוספת שמן זית, או סתם תבלינים יבשים – אורגנו, טימין, כוסברה יבשה ושום גבישי
תוכלו להכין את הלחם בתבנית עגולה, אובאלית או תבניות קטנות, מה שיש בבית – יצא נפלא בכל מקרה!
ריבת עגבניות שרי
צנצנת בינונית
- ½ קילו עגבניות שרי יפות
- 2 כוסות סוכר (400 גר)
- 1 שקית סוכר וניל
- ½ לימון פרוס
- קורט קינמון / מקל קינמון
- קורט פלפל שחור
- מיץ מחצי לימון
אופן ההכנה:
- שוטפים את העגבניות. יוצרים בכל עגבניה כמה חורים קטנים בעזרת קיסם.
- מניחים את עגבניות, סוכר, סוכר וניל, פרוסות לימון, וקינמון בסיר רחב. מחממים על להבה בינונית- קטנה עד שכל הסוכר הופך לנוזלי.
- מגבירים מעט את הלהבה, מוסיפים פלפל שחור ומבשלים כשעה- שעה ורבע עד לצמצום הנוזלים והריבה מסמיכה. מעבירים לכלי אטום ומצננים . אחרי הקירור היא תתמצק יותר ותהפוך לריבה ריבתית וטעימה!
כדאי לדעת:
- אפשר לשמור את הריבה בצנצנת זכוכית מעוקרת , או בקופסא אטומה במקרר. היא נשמרת לזמן רב מאד
- מתאים להגיש את הריבה ליד לחם או חלה טריה, כחלק ממנה ראשונה בשבת או סתם כשפותחים שולחן לאורחים (בקרוב אמן!)
