יש לי בלוגולדת!! כן כן, שנתיים תמימות עברו מאז הערב הקר ההוא בו העליתי את האתר כבלון ניסוי חביב, יותר כספר מתכונים אישי שיחליף את תמונות האוכל והפתקים ששמרתי בכל מקום. מאז עברו נהרות רבים של שוקולד, קמח וחמאה במטבח האהוב שלי. קורסים וסדנאות צילום שלמדתי ולימדתי, ימי שישי דחוסים ועמוסים בין המצלמה למרק העוף.. עשרות פוסטים, מאות תמונות, אלפי מילים. ואין ספור תגובות ותמונות מלהיבות מכן, קוראות אלופות, שנותנות לי חשק להיכנס למטבח ולהפעיל את המיקסר והמצלמה שוב ושוב, ושוב.
על הדרך זכיתי להכיר חברות חדשות, שותפות לאהבה למטבח, לצילום, לאסתטיקה מוקפדת. ובשיחת טלפון אחת כזו של מה נשמע ומה חדש עם שרה כץ, המעצבת הגרפית האלופה שהייתה לי הזכות לפגוש בפרויקט משותף, נולד לו רעיון: למה שלא נחגוג "בלוגולדת" כמו שצריך? בכל זאת שנתיים לא הולכות ברגל..
אז החלפנו רעיונות, צבעים וטעמים. אווירת השוק שנכנסה לחיי לאחרונה תרמה את ניחוחות התותים והפיסטוק. אופה לשבת ג'וניורית המוכשרת (חמסה חמסה) חיזקה את הצד האומנותי בלטרינג "בלוגולדת" מושלם, ושרה עם מגע הקסם ארזה לנו הכל באריזות הכי מתאימות שיש (רק שימו לב לפרטים!). לי נשאר רק לרקוח, להכין ולצלם. את התוצאה אני מקווה שתאהבו לפחות כמוני!!
בקיצור, כמו שהבנתם, התלהבויות! אבל בואו נשים את התפאורה בצד לרגע, ונדבר על החגיגה עצמה, העוגה! או במקרה שלנו -2 צורות הכנה לאותו קינוח בדיוק: פעם כטארט ופעם כקינוח בכוס. הרכיבים – זהים: בצק פריך פיסטוק, מוס תותים ושוקולד לבן, מרציפן פיסטוק (מיוחד, בקלי קלות!), ועיטורי שמנת מתוקה. ועוד דובדבן אחד קטן בקצפת – דיסקית שוקולד רובי. לפני כשנתיים (שמתם לב לסמליות? שוב?) השיקה חברת השוקולד "קליבו" את השוקולד הוורוד, או בשמו הרשמי- שוקולד רובי, שצבעו הוורוד הוא טבעי לגמרי. אז אמנם לא השתמשתי בשוקולד רובי המקורי מטעמי כשרות, אבל גם החיקוי שלו – מהפנט במיוחד. כל הפרטים איך מכינים את הדסקיות – במתכון.
חדי העין בינכם אולי הבחינו בשינוי קטן באתר: כי שרה לא הסתפקה באריזות, וכמו חברה טובה השאירה לי מתנה אמיתית – שדרוג של הלוגו הוותיק, שמאילוצי מתחילים נוצר בתכנת power point לפני שנתיים. תראו אותו עכשיו, כמה יפה התבגר! ספרו לי מה דעתכם עליו בתגובות, ומה האיחולים והבקשות שלכם לשנים הבאות.
בואו נתחיל בזה שאחפור פחות… ואתן למתכון לדבר. סליחה, לחפור.
טארט תות פיסטוק
לבצק פריך פיסטוק:
- 100 גר' אבקת סוכר
- 2 כפות פיסטוקים קלופים (20 גר')
- 200 גר' חמאה
- קורט מלח
- 2 כוסות קמח (280 גר')
- ביצה
למרציפן פיסטוק:
- 100 גר' שקדים מולבנים טחונים
- 3 כפות פיסטוקים קלופים (30 גר')
- ½ כוס סוכר
- 4 כפות מים (40 גר')
- 2 כפות מחית פיסטוק (20 גר')
למוס תות ושוקולד לבן:
- 4 גר' ג'לטין מומס ב 20 גר' מים קרים
- 200 גר' תותים קפואים (1/3 1 כוסות)
- ¼ כוס סוכר
- כף מיץ לימון סחוט
- 100 גר' שוקולד לבן
- 240 מ"ל שמנת מתוקה
לעיטור:
- 240 מ"ל שמנת מתוקה
- כף אבקת פודינג וניל
- פיסטוקים, תותים טריים
- 100 גר' שוקולד רובי
אופן ההכנה:
- מכינים מרציפן פיסטוק: במעבד מזון טוחנים פיסטוקים ושקדים. בסיר קטן מניחים סוכר ומים, מרתיחים תוך כדי ערבוב (זהירות מקירמול הסוכר!) ומבשלים מספר דקות לקבלת סירופ סמיך. יוצקים את הסירופ על השקדים במעבד מזון תוך כדי ההפעלה, למשך מספר שניות. מוסיפים את מחית הפיסטוק ומעבדים שוב. מתקבל מרציפן ירקרק, מעין בצק חלק ואחיד. מרדדים בין שני נירות אפיה חלקים לעיגול בקוטר כ 30 ס"מ. מעבירים למקפיא.
- מכינים בצק פריך: במעבד מזון (לא חייבים לנקות אותו מהמרציפן) טוחנים אבקת סוכר ופיסטוקים. מוסיפים קמח, חמאה קרה חתוכה לקוביות, ומלח. טוחנים שוב לקבלת פירורים דקים. מוסיפים ביצה ומעבדים מעט רק עד לקבלת גושי בצק. מרדדים את הבצק בין שני נירות אפיה חלקים לעובי המתאים לתבנית בה תשתמשו. לטארטלטים – בצק בעובי 4-5 מ"מ, לטארט גדול – ניתן לרדד לבצק מעט עבה יותר. מעבירים את הבצק להקפאה למשך כחצי שעה.
- מרפדים את תבניות הטארט: אם משתמשים ברינגים מחוררים – חשוב לשמן את הרינג בעזרת מעט חמאה כעת. מסירים את ניר האפיה העליון מעל פני הבצק. הבצק צריך להיות חצי קפוא, כלומר – קר מספיק כדי שיפרד בקלות מניר האפיה, אך לא קפוא לגמרי כדי שנוכל לרפד את התבניות בלי שהוא ישבר. עובדים בזריזות כדי שלא יפשיר מהר מדי. קורצים בעזרת הרינג הרצוי את תחתית הטארט, ומעבירים את הרינג והבצק המתאים לתבנית תנור מרופדת בניר אפיה. בעזרת סכין חדה חותכים רצועות בצק בגובה הרינג , מצמידים את הרצועות לדפנות הרינג ומהדקים לבצק שבתחתית. מסירים עודפי בצק משפת הרינג בעזרת סכין חדה. מחוררים את הבצק בעזרת מזלג . מרפדים בצורה כזו את כל הרינגים, במידה והבצק הפשיר וכבר קשה לעבוד אתו – מחזירים להקפאה קצרה. מקפיאים את הרינגים עם הבצק לפחות שעה לפני האפיה.
- אופים את הטארט: מחממים תנור ל 200 מעלות. מניחים בזהירות ניר אפיה בגודל הטארט על פני הבצק הקפוא כולל הדפנות, וממלאים בקטניות עד שפת הרינג. השתדלו כמה שפחות לקמט את ניר האפיה כדי שגם הבצק שתחתיו יישאר חלק לאחר האפיה. אופים כ 15 דקות עד ששפתי הבצק מזהיבות. מסירים את ניר האפיה עם הקטניות ומצננים לחלוטין.
- מכינים מוס תותים: כלי קטן מערבבים אבקת ג'לטין ומים קרים ומשהים לספיגה כ 15 דקות. חותכים את התותים לחתיכות גסות ומניחים בסיר קטן עם הסוכר, המים ומיץ הלימון. מרתיחים ומבשלים 10 דקות עד שהתותים מתרככים לגמרי. במיכל צר מניחים שוקולד לבן ואת ספוג הג'לטין, יוצקים את רוטב התותים על השוקולד הלבן והג'לטין, ממתינים כדקה וטוחנים בעזרת בלנדר מוט לקבלת קרם חלק בצבע ורוד – סגלגל. מצננים לטמפרטורת חדר. בקערת מיקסר עם מקצ, בלון מקציפים שמנת מתוקה למרקם יוגורט (לא הקצפה מלאה) מוסיפים לערבל במהירות נמוכה תוך כדי הוספת קרם התותים. מקפלים בעזרת מרית לקבלת מוס אחיד.
- מרכיבים את הטארט: מעבירים את המוס לשק זילוף ומזלפים שכבת מוס דקה על תחתית הטארט. מוציאים את המרציפן מהמקפיא וקורצים ממנו עיגול או מלבן קטן מגודל הרינג. מניחים את דיסקית המרציפן מעל שכבת המוס הדקה ומכסים במוס עד לגובה הטארט. מיישרים בזהירות בעזרת פלטה מדורגת וממלאים כך את שאר הרינגים. מעבירים למקפיא להתייצבות של שעה- שעתיים
- מכינים דסקיות שוקולד: ממיסים שוקולד רובי במיקרוגל בפולסים של 30 שניות עד להמסה מלאה. יוצקים את השוקולד על דף גיטרה בגודל A4 (חושבים על דף תווים? לא ממש.. קראו בכדאי לדעת מה זה בדיוק ומה עושים בלעדיו) משטחים מעט ומניחים עליו דף גיטרה נוסף, מישרים ומהדקים בעזרת מערוך כך שמתקבלת שכבה דקיקה של שוקולד בין שתי יריעות הפלסטיק. ממתינים שתי דקות להתייצבות השוקולד, וקורצים את השוקולד עם הניילון עיגולים בקוטר 3-4 ס"מ. מעבירים למקרר לרבע שעה עד להתקשות מוחלטת של השוקולד. מסירים את הפלסטיק בתנועה מהירה ושומרים בצד.
- מקשטים את הטארט : מקציפים שמנת מתוקה עם אבקת פודינג וניל לקבלת קצפת יציבה ונוחה לזילוף. מעבירים לשק זילוף אם צנטר חלק ומזלפים תלוליות על פני הטארט. מפזרים שברי פיסטוקים, קוביות תותים ודסקיות שוקולד.
כדאי לדעת:
- אפשר להכין את הקינוח בכוסות – את הבצק הפריך אופים בשכבה אחת במקום ברינגים, מפוררים ומניחים שתי כפות בתחתית הכוסות. את המרציפן המרודד חותכים לקוביות קטנות. ממלאים את הכוס עד לגובה הרצוי במוס תות, עליו מניחים מרציפן פיסטוק ומכסים בשכבת מוס נוספת. מעטרים בשמנת מוקצפת, פיסטוקים ודסקיות שוקולד לבן או ורוד.
- דף גיטרה – עוד לא שמעתם עליו? זוהי יריעת פלסטיק דקה, קשיחה יחסית אך עדיין גמישה יותר משקף שמשתמשים איתה רבות בהכנת קישוטי שוקולד. ניתן להשיג בחנויות המתמחות. לי יש כשרון מיוחד לבזבז אותן בטרם עת. הפתרון שלי – להשתמש במפות שולחן החד פעמיות, מהסוג הכי עבה. כשלא פותחים אותן הן נשארות עבות ויציבות בדיוק כמו דף גיטרה ובפחות היערכות.
- שומרים את הטארט במקרר עד יומיים, ובמקפיא לתקופה ארוכה יותר.
