מכיוון שהיא כל כך פשוטה החלטתי לצרף לה גם מתכון לנשיקות בסיסיות ומתוקות שתמיד כיף למצוא במקפיא ולשדרג איתם בדקה את המנות הכי בנאליות. אפשר כמובן לוותר עליהן ולעטר את העוגה רק בקצפת ולפדר באבקת קקאו לפני ההגשה. אפשר להשתמש בפירות שונים, מיני אגוזים ותופינים ועוד ועוד. העוגה עצמה שוקולדית ונימוחה, ותקבל באהבה כל תוספת שתרצו. שיהיה במזל טוב!
עוגת יומולדת – שוקולד ושקדים
מתאים לרינג בקוטר 22 ס"מ
לעוגת שוקולד – שקדים:
- 250 גר' שוקולד מריר
- 200 גר' חמאה / מחמאה
- 1/2 2 כוסות שקדים מולבנים טחונים (250 גר')
- 6 ביצים מופרדות
- 1/4 1 כוסות סוכר (250 גר')
- 2 כפות ליקר שוקולד – לבחירה
לנשיקות:
- 3 חלבונים בטמפ' חדר (120 גר')
- 1 כוס סוכר (200 גר')
- מעט צבע מאכל – לבחירה
לעיטור:
- 1/2 1 מכלי קצפת צמחית (360 מ"ל)
- 2 כפות אינסטנט פודינג וניל
- דסקיות שוקולד
- דובדבנים
אופן ההכנה:
- מכינים עוגת שוקולד: מניחים בקערה קוביות חמאה / מחמאה ושוקולד, וממיסים במיקרו. מוסיפים פנימה שקדים טחונים, חלמונים וליקר וטורפים לתערובת אחידה.
- מקציפים חלבונים וסוכר לקצף יציב. מקפלים בזהירות לתערובת השוקולד כשליש מהחלבונים, ומוסיפים בהדרגה את השאר. מקפלים בעדינות לתערובת אחידה.
- מעבירים לתבנית משומנת ואופים בתנור מחומם ל 180 מעלות כ 45 דקות. העוגה מקבלת קרום יבש אך עדיין רוטטת במרכזה.
- מצננים מספר שעות במקרר להתייצבות מוחלטת
- מכינים נשיקות: מנקים היטב את קערת המיקסר והמקצף, אפשר למרוח אותם במעט חומץ או מיץ לימון.
- מתחילים להקציף חלבונים במהירות גבוהה תוך כדי הוספת הסוכר בהדרגה. ממשיכים להקציף את החלבונים עוד 20 דקות (כן כן, זה חשוב!) לקבלת מרנג לבן בוהק ומעט מסטיקי. מעבירים לשק זילוף עם צנטר משונן (זוכרים?) ומזלפים נקודות קטנות על גבי תבנית תנור מרופדת בניר אפיה. אפשר גם לזלף מקלות מרנג ארוכים בחלק מהכמות.
- את אפקט הצבע מקבלים על ידי מריחה של טיפת צבע מאכל בצידי שק הזילוף סמוך לפיה לפני שממלאים אותו במרנג. אני משתמשת בקיסם אזניים כדי להניח את טיפת הצבע במיקום הנכון.
- אופים את הנשיקות כשעה וחצי בתנור מחומם ל 110 מעלות, עדיף בטורבו. זמן האפייה תלוי בגודל הנשיקות ולכן כדאי לבדוק: האם הן נפרדות בקלות מניר האפייה? כששוברים אחת – האם היא יבשה ופריכה גם בפנים? אם לא – ממשיכים לאפות עוד מספר דקות.
- מרכיבים : מחלצים את העוגה מהתבנית ומניחים אותה על צלחת הגשה. פורסים את העוגה באמצעה.
- מקציפים שמנת צמחית ופודינג וניל לקבלת קצפת יציבה ונוחה לזילוף. מעבירים לשק זילוף עם פיה משוננת. מזלפים תלוליות מהקצפת על חצי העוגה המונח על צלחת ההגשה, מפזרים פרוסות דובדבנים קטנות. מניחים את שכבת העוגה השנייה בזהירות על הקצפת.
- מזלפים שוב תלוליות קצפת על פני העוגה, ומקשטים בנשיקות, דובדבנים ועיגולי שוקולד.
- שומרים בקירור עד להגשה.
כדאי לדעת:
- ניתן גם להקפיא את העוגה, רצוי ללא הפירות.
- דסקיות שוקולד מכינים כך: ממיסים שוקולד מריר במיקרו בפולסים של 30 שניות ומערבבים בין לבין. משטחים את השוקולד על שקף מדוגם או ניר כסף. מעבירים למקרר למספר דקות מועט: בודקים מדי פעם שהשוקולד התייצב והוא חלק למגע, אך עדיין רך. בשלב זה ניתן לקרוץ עיגולים ולהחזיר אותו לקירור מלא. אם פספסתם את הרגע והשוקולד התקשה לחלוטין – אפשר גם לחמם את הקורצן בלהבת הגז או בברנר, וכך לקרוץ ולקרר מיד להתייצבות.
