אתם חייבים, אבל חייבים לנסות את העוגה הזו בפסח הקרוב. כן, זה משפט נדוש שנאמר ונכתב כל כך הרבה, אבל במקרה הזה הוא באמת נכון! היא עד כדי כך טובה שאפילו הכנתי אותה עכשיו, שבוע לפני פסח כשהמטבח ממש עוד לא עבר למצבו הפסחי וכולנו מנסים למלא חסכי חמץ עתידיים ולחסל מלאי קמח. למרות שהיא פסחית למהדרין היא לגמרי לא מרגישה כזו – מדובר בעוגה שוקולדית ועסיסית, ממש לא מסוג עוגות החנק שאנחנו מכירים העמוסות בקמח תפו"א ומתפוררות בחינניות. השימוש בקמח השקדים ופירורי שוקולד הופכים אותה ללחה וגבוהה, והציפוי השוקולדי רק מוסיף.
העוגה הזו מתאימה לכולם בכל נקודת זמן: ללא גלוטן כמובן, ללא שרויה, ללא קטניות, ללא מרגרינה או תחליפיה, לא חלבית, ואפילו לא מסובכת. אז מה היא כן? להיט נחטף. המלצה חמה: תכפילו כמויות!

עוגת שוקולד עסיסית לפסח
רינג בקוטר 18 ס"מ
לעוגה:
- 4 ביצים גדולות
- 1/2 כוס סוכר (100 גר')
- 150 גר' שוקולד מריר
- 1/2 כוס שמן
- 100 גר' שקדים מולבנים טחונים
- 1/4 כוס קקאו (35 גר')
- קורט מלח
- חצי כפית אבקת אפייה
לציפוי שוקולד:
- 60 גר' שוקולד מריר
- 5 כפות מים
- כפית סוכר
- כפית שמן
- 1/2 כפית קפה נמס
אופן ההכנה:
- מכינים עוגה: מקציפים ביצים שלמות עם סוכר במיקסר כ 5 דקות לקבלת קציפה בהירה ותפוחה.
- במקביל מכינים את השוקולד – מגרדים אותו לפירורים או קוצצים במעבד מזון (הכי קל)
- לביצים המוקצפות מוסיפים שמן וממשיכים לערבל כדקה.
- מוסיפים את שאר החומרים: שקדים טחונים, קקאו, פירורי שוקולד, מלח ואבקת אפיה ומערבלים במהירות נמוכה לאיחוד.
- מעבירים את העיסה לתבנית קטנה או רינג עטוף בניר כסף, משומנים מעט.
- אופים בתנור מחומם ל 180 מעלות כ 45 דקות.
- מוציאים מהתנור ומעבירים סכין דקה בין דפנות התבנית לעוגה. העוגה תצנח מעט במרכזה וזה בסדר, זה אפילו החלק הכי טעים ועסיסי..
- מצננים את העוגה לפני הציפוי.
- מכינים ציפוי: מניחים את כל חומרי הציפוי בסיר קטן ומבשלים על להבה בינונית תוך כדי ערבוב עד להמסת השוקולד ולקבלת ציפוי חלק ומבריק. מצננים מעט לפני הציפוי.
- מעבירים את העוגה לצלחת הגשה, יוצקים מעליה את הציפוי השוקולדי ומעטרים בתלתלי שוקולד או שקדים פרוסים.
כדאי לדעת:
- השימוש בשקדים מולבנים טחונים הוא שאחראי על המרקם העדין של העוגה. בשימוש בשקדים טחונים עם קליפה תתקבל עוגה מעט פחות עדינה.
- אם הכפלתם כמויות (מומלץ!) אין צורך להכפיל את כמויות הציפוי. הוא יכול להספיק ברווח גם לעוגה גדולה.
- אם שאלתם את עצמכם איך מעבירים עוגה האפויה בתוך רינג מרופד בניר כסף לצלחת – זו השיטה בה אני משתמשת: מצננת את העוגה כדי שלא תתפרק, מעמידה אותה בעדינות על הצד – כלומר הרינג, מקלפת את נייר הכסף (המשומן, מתקלף בקלות) ואז מרימה את הרינג כשהוא עדיין על צדו ומניחה בעדינות ממש מעל צלחת ההגשה. מעבירה שוב סכין בין העוגה לדפנות הרינג ומרימה אותו בעדינות.
- את העוגה קישטתי בתלתלי שוקולד עדינים שקילפתי בעזרת קולפן פשוט מחפיסת שוקולד אחת.

הכנתי את העוגה לכבוד שבת. מכיון שאני בדיאטה דלת פחמימות השתמשתי בשוקולד 85% קקאו והחלפתי את הסוכר באריתריתול (תחליף סוכר שמתנהג באפייה כמו סוכר).
העוגה יצאה פשוט מושלמת! עסיסית, טעימה, מפנקת…
אגב, לי היא נכנסה בשתי תבניות אינגליש קייק.

Today, I went to the beach with my children. I found a sea shell and gave it to my
4 year old daughter and said "You can hear the ocean if you put this to your ear." She placed the shell to her ear and screamed.
There was a hermit crab inside and it pinched her
